Banana Baked Oatmeal with Pistachios & Chocolate

Ingredients
  • 2 bananas, mashed
  • 2 Tbsp. Almond butter
  • 1/2 tsp. Vanilla extract
  • 1 egg
  • 1/4 cup milk
  • 1 tsp. Honey
  • 1 cup rolled oats
  • 1/4 tsp. Cinnamon
  • 1 tsp. Baking powder
  • 1 cup chocolate chunks
  • 1/4 cup chopped @keenanfarms no shell pistachios
Preparaton
  1. Preheat the oven to 400F.
  2. Combine dry ingredients, set aside.
  3. Combine wet ingredients.
  4. Add mixed dry ingredients to mixed wet ingredients.
  5. Add chocolate chunks and pistachios, mix all together. Add to an 8” by 8” greased baking dish.
  6. Bake for 25 min.
  7. Let cool before cutting into squares! Eat now or enjoy breakfast, snacks, and/or dessert all week.
