Butternut Squash & Sweet Potato Soup

Dinner, Kid-Friendly, Lunch, Snack, Vegetarian Diet
Perfect Pairings:
  • 2.5 cups butternut squash, cubed
  • 2 cups of sweet potato, cubed
  • 1 shallot, roughly chopped
  • 3 garlic cloves
  • 3 cups of vegetable broth
  • Salt and pepper, to taste
  • @keenanfarms no shell pistachios, chopped to garnish
  1. Preheat your oven to 400F.
  2. Add cubed butternut squash, cubed sweet potato, shallot, and garlic cloves to a sheet pan on parchment paper.
  3. Roast them in the oven for 30 min.
  4. Add roasted vegetables to a blender with 3 cups of vegetable broth, salt and pepper to taste.
  5. Blend until smooth.
  6. Add to a bowl and garnish with chopped @keenanfarms pistachios!
