Fall Harvest Salad

Breakfast, Dinner, Kid-Friendly, Lunch, Snack, Vegetarian Diet
Perfect Pairings:
Ingredients
  • 5 oz. dark leafy greens
  • 1 honey crisp apple, thinly sliced
  • 1 medium sized sweet potato, roasted in cubes (400F for 25 min)
  • 1/2 cup cooked quinoa
  • 1/4 cup goat cheese
  • 1/4 cup chopped @keenanfarms pistachios

Salad Dressing Ingredients

  • 1/3 cup olive oil
  • 1 Tbsp. apple cider vinegar
  • 1/2 tsp. Dijon mustard
  • 1 tsp. honey
  • Pinch of salt
Preparaton
  1. Make salad dressing.
  2. Combine dark leafy greens and salad dressing, toss.
  3. Top with remaining salad ingredients: sliced apple, roasted sweet potato, cooked quinoa, goat cheese, chopped pistachios. Toss together.
