Pistachio & Onion Crusted Salmon

Perfect Pairings:
  • 4, 6 oz salmon filets
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 3 Tbsp. @keenanfarms no shell pistachios, finely chopped
  • 2 Tbsp. Panko bread crumbs
  • 1/8 tsp garlic powder
  • Fresh squeezed lemon juice from half of a lemon
  • 1 tsp. stone ground mustard
  • 1/4 cup yellow onion, diced
  • Italian parsley to garnish
  1. Preheat the oven to 375 F
  2. Pat salmon fillets dry and season with 1/8 tsp salt and 1/8 tsp. pepper. Set aside.
  3. Combine 3 Tbsp. chopped @keenanfarms no shell pistachios, 2 Tbsp. Panko bread crumbs, 1/8 tsp. garlic powder, and 1/8 tsp. salt. Set aside.
  4. Combine fresh lemon juice, 1 tsp. stone ground mustard, and 1/4 cup diced yellow onion.
  5. Combine both mixtures and distribute evenly on top of each salmon filet. Make sure the salmon is skin down.
  6. Roast in the oven for 15 minutes.
  7. Garnish with fresh chopped parsley and ENJOY for dinner or meal prepped for a weeks full of lunches!
