Pistachio Spinach Hummus

Appetizer, Kid-Friendly, Snack, Vegetarian Diet
Perfect Pairings:
  • 2, 15.5 oz cans of garbanzo beans
  • 1 cup no shell @keenanfarms pistachios
  • 4 garlic cloves
  • 1 cup olive oil
  • 1/2 lemon, freshly juiced
  • 1/2 cup spinach
  • 2 Tbsp tahini
  • 1 tsp salt
  • 1 tsp cumin
  • Fresh parsley, to garnish
  1. Add 2 cans of garbanzo beans, 1 cup pistachios, 1 cup olive oil, and 4 garlic cloves to a food processor. Blend on high until smooth.
  2. Add in the lemon, spinach, tahini, salt and cumin to the mixture. Blend until smooth.
  3. Serve on a snack board garnished with parsley! You can also add to sandwiches, wraps, or bowls for a high protein and flavorful addition!
